Tokaji 5 Puttonyos

Aszú wine production starts with specialised picking of individual botrytis-affected grapes. These shrivelled grapes are pounded into a paste and stored in tubs called puttonyos, which are then mixed in with a base wine in fixed proportions (in this case, 5 puttonyos per every 136-litre cask of base wine), and left to macerate 6 to 8 hours for extraction of sugar and flavor. After pressing, this sugar-rich mixture slowly continues fermentation and undergoes long oxidative aging in the cool cellars.

"Vibrantly golden, this seamless dessert wine deftly knits a firm backbone of acidity and a streak of salinity to a broad range of glazed apricot, singed orange peel, almond skin, ground cardamom and crystallized honey flavors. Delivers a long, lacy finish. Drink now through 2033. 2,000 cases made."
