85% Trebbiano Spoletino/15% Grechetto. From certified-biodynamic vines, planted from 1999-2008 on the estate's typical heavy clay soils with limestone. The bunches are harvested by hand early in the morning and immediatey destemmed and co-fermented spontaneously and with no sulfur or temperature control in open-topped vats (tini). There is a two-day maceration before a gentle pressing off of the skins and continued fermentation to dryness. The controlled and gradual oxygenation--from open-topped fermentation and from rackings during its three months of aging on fine lees in steel tank--eliminates the need for sulfur in the wine. It is bottled without any sulfur or filtration.
