This wine comes from vineyards that sit atop the hill behind the winery located in El Palomar, which translates to Pigeon house. Usaran
is the Basque translation for the Spanish word Palomar. The wine is composed exclusively of native grape varieties, Tempranillo,
Garnacha and Graciano. Each parcel is vinified and variety and raised separately. Foot-trodden, 50% whole cluster pressed. Fermented in
cement, then aged 6 months in foudre and 18 months in used barrique; bottled without clarification or filtration.
