VDF "Cheville de Fer"
100% Côt (aka Malbec). From 70-year-old, organically farmed, hand-harvested estate fruit. Vins Contés reds are all made similarly: semi-carbonic maceration with whole clusters in closed tanks with CO2; spontaneous-fermentation with indigenous yeasts only; aging in 500-liter demi-muids for 6 months; bottling without fining or filtration; no sulfur added at any point. The maceration is the shortest and aging the longest of all VC reds in order to tame the tannins. "Cheville de Fer" means "ankles of iron", a humorous reference to what is required of the plow horse, given how hard the ground becomes when the clay gets soaked and then dries in this parcel of old vines.
