VDF "Dolia" (Sauvignon)
100% Sauvignon Blanc. "Dolia" is a new bottling for Tue Boeuf in the 2020 vintage, from organic fruit from 30-year-old vines on clay-limestone soils farmed by a Cher Valley friend; the Puzelats have been working with this fruit for a long time but for the first time vinified and aged it separately in an Italian stoneware amphora called a dolia*. The bunches were hand-harvested, whole-cluster-pressed, fermented spontaneously with natural yeasts in one 10-hectoliter dolia, where the wine was also aged without racking. The wine was bottled unfined and unfiltered and without sulfur (at any point during its vinification or aging). Limited production.
*As Zöe Puzelat explained, the dolia is different from Tue Boeuf's usual amphoras (Georgian qvevr)i in their mineral make-up and their firing time. Also, the dolia is larger-capacity, thicker-walled and freestanding above ground versus the buried qvevri. The Puzelats find that this stoneware vessel amplifies the expression of the limestone soils through the Sauvignon for a more pointedly mineral effect in the wine.
