100% Sauvignon Blanc (sometimes contains Chardonnay but not in 2020). From organically farmed, hand-harvested vines of around 30 years old, the younger Sauvignon on the estate. Direct press of whole clusters; spontaneous fermentation with indigenous yeasts in fiberglass tank; aging in fiberglass as well; bottling without fining or filtration in January after the harvest; no sulfur added at any point.
