Vermentino De la Terre à la Lune
100% Vermentino. Combel La Serre has small one-hectare plot of very young Vermentino vines in their home village of Cournou on the limestone plateau of the Causse--it went into production in the 2014 vintage--which to date yields quite little (23 hl/ha in the 2016 vintage). The soil is rich with limestone and faces north, allowing the Ilberts to make a surprisingly fresh style of white in this very warm sub-region, classified simply as IGP Côtes-du-Lot since there is no allowance for white wine in this red-wine-driven appellation. To emphasize the freshness, the fruit is harvested and pressed as whole clusters without skin contact; the wine is fermented with native yeasts in steel tank and bottled quickly.
