100% Vermentino. From a one-hectare, north-facing plot of Vermentino vines on limestone in the Ilberts' home village of Cournou on the plateau known as the causse. Farming is organic and harvest is by hand. The bunches are pressed as whole-clusters with no skin maceration; fermentation is with native yeasts in steel; brief aging is also in steel.. The wine is classified as an IGP Côtes-du-Lot since there is no allowance for white wine in Cahors.
