Versante Nord Bianco IGT Terre Siciliane
50% Minella/15% Carricante/35% Catarratto-Grecanico-Inzolia. Eduardo organically farms 5-6 different parcels of field-blend white varieties on the north face or versante nord of Mt. Etna at elevations ranging from 550 to 950 meters. A majority of the wine consists of the rare native white Minella; the rest included other local varieties Catarratto, Carricante,Grecanico and Inzolia. Grown is sandy soils rich in volcanic ash, the alberello vines average 45-50 years in age. The bunches are hand-harvested, destemmed, co-fermented spontaneously with yeasts in concrete tank without temperature control; maceration varies from 2-5 days. Aging takes place in a combination of Slavonian oak botti, tonneau and barrique for 6-8 months.
