The fruit was picked over a 3 week window starting with the Pinot Blanc on Sept. 25 and ending with Riesling on October 20th. Almost everything was pressed and fermented together in a large stainless closed top tank. The first juice was almost done with fermentation by the time the Riesling was picked so the Riesling was fermented on its own and blended in. After a short aging in tank the wine was bottled in January 2019.
