Vino Bianco "Caliptra"
100% Trebbiano, from four different parcels totaling 3/4 of a hectare. The vines were planted in 1971, 1976, 1977, and 1982. The vineyards descend from 400m down to 200m, which exposures ranging from east to south. The upper part is clay-limestone, whereas closer to the bottom there is silty clay with outcroppings of pure chalk. Yields are 6500kg/ha. 50% of the grapes are crushed and immediately pressed in a hydraulic basket press; the other half are macerated on their skins for 2 weeks. Fermentation is spontaneous in cement and stainless. Aging is is cement for 6-8 months. 4000 bottles produced.
