Vino Bianco "Caliptra"
100% Trebbiano Toscano, from various parcels. The vineyards descend from 400m down to 200m, with exposures ranging from east to south. The upper part is clay-limestone, whereas closer to the bottom there is silty clay with outcroppings of pure chalk. Yields are 6500kg/ha. The grapes are crushed and immediately pressed in a hydraulic basket press. Fermentation is spontaneous in cement and stainless. Aging is is cement for 6-8 months. 3000 bottles produced.
