100% Sagrantino. From certified-biodynamic estate fruit, harvested by hand earlier than Sagrantino for red wines. The grapes are destemmed, pressed immediately and see no maceration. Fermentation is spontaneous with natural yeasts and no sulfur; the wine goes through malolactic fermentation and is aged for 3 months in stainless steel tank. It is bottled without fining, filtration or sulfur and with a crown cap in a liter bottle.
