Vino Rosso (Freisa)
100% Freisa. From estate parcels scattered about the steep hills of the Monferrato zone of Asti. The Verrua family--Nadia and her mother Maria Teresa and her father Ottavio--farms the vines organically farmed, tending and harvesting them entirely by hand. The grapes are destemmed with the berries kept whole; they are very gently pressed, without breaking the skins, just enough to kick off fermentation. No yeasts or sulfur are added. Maceration in cement and steel tanks lasts up to 2 months+. The wine ages on its lees for a few months before being bottled without fining or filtering or with only a gram or two of sulfur.
Label note: unlike most Tavijn labels with the playful and clever artwork of Gianluca Cannizzo, the Freisa shows a different creative flair: Nadia used old Barbera d'Asti labels (from a wine no longer classified as such), cut them into circles and glued those circles to the Freisa bottles. So don't be fooled if you see the word or part of the word "Barbera" on this bottle: it is without a doubt Freisa in purezza!
