Zibibbo IGT Terre Siciliane "Integer"

Sicily

100% Zibibbo. The fruit for the Integer bottling comes from De Bartoli's estate vines on the island of Pantelleria, far off the coast of their mainland Marsala estate (where their Grillo is grown). The old vines are bush-trained on north-facing terraes and planted in sandy, pebbly, black volcanic soils. They are organically farmed and harvested manually with particularly strict selection for Integer. The bunches are destemmed and the fermentation is spontaneous, with indigenous yeasts only and with no sulfur or temperature control. Maceration lasts several months in clay amphorae; malolactic fermentation occurs naturally; aging lasts around 10 months on the lees. The wine is bottled without fining, filtration or the addition of sulfur and like all  De Bartoli dry whites is classified as IGT Sicilia. "Integer" means "whole" and is the root word of "integrity"--the Integer bottlings are so named to represent the De Bartolis' intention to express the fullest, most pure potential of native Sicilian white varieties in the most traditional, pre-technological way.
