100% Grillo. From organically farmed estate vines in the Samperi contrada of Marsala. They are 30 years old, planted on sandy, limestone-rich loam and trained in both Guyot and alberello. The very best Grillo bunches from the harvest are selected for "Grappoli del Grillo". They are gently pressed and the must naturally settled for 48 hours, followed by a spontaneous fermentation to dryness with native yeasts in stainless steel tanks. The wine is aged for a year with a periodic stirring of the lees in French oak barrels ranging from 250 to 1000 liters. It is bottled as IGT Terre Siciliane.
