100% Cabernet Franc. "Le Domaine" is not a new bottling for Baudry but was only now, with the 2023 vintage, made available to Bowler. It comes from vines around 30 years old, planted on sandy soils over sedimentary yellow tuffeau in two parcels: one at the top of Chinon on a plateau above Croix Boissée and the other on a hillside . near their Clos Guillot. The farming is certified-organic. All vineyard work, including harvest, is by hand. The fruit is destemmed without crushing and moved by gravity into unlined cement vats. Fermentation is spontaneous with native yeasts and without temperature control; maceration lasts around two weeks with a daily pumpover and no punchdowns. The wine is aged in concrete tank for 15 months and bottled without filtration. Sulfur usage is minimal.
