100% Chardonnay. From a small estate parcel in the lieu-dit of Enclume. The vines were planted in 1970 on flinty, sandy, pebbly soils. The farming is organic and all work including harvest by hand. The whole clusters are gently pressed and the must settled overnight and moved by gravity into Burgundy barrels. Fermentation is spontaneous. The 2020 was aged in barrel for 15 months. It was bottled by hand in December 2021 without fining or filtering. Production: 272 bottles.
