100% Chardonnay. The Boulards own a small parcel in the grand cru of Mailly-Champagne in the Montagne de Reims. The vines were planted in the mid-1980's and they are farmed organically. The harvest is manual. The bunches are gently pressed and the must fermented in oak with indigenous yeasts. The wine is aged in barrel for 18 months and bottled without fining or filtration.
