100% Pinot Noir. The fruit for this still red wine comes from a Boulard parcel in the grand cru village of Mailly on the eastern edge of Montagne de Reims. The bunches are harvested by hand and destemmed; fermentation is in oak with indigenous yeasts with a three-week maceration and daily pumpovers. The wine is aged in new Burgundy barrels on its lees  for 18 months and bottled without fining or filtering.
