100% Chardonnay. This méthode-ancestrale white is Renardat-Fâche's only wine from purchased fruit, certified-organic grapes on grown on limestone in Bugey. Hand-harvested, fermented with native yeasts in tank, bottled at 6% alcohol, kept on the lees for a year and finished dry (5-7 grams sugar/liter) at around 10.5% ABV. Classified as a Vin de France since there is no appellation applicable for this wine.
