IGT Sangiovese Toscana "San Martino"

100% Sangiovese. "San Martino" 2018 is the first separate bottling of this parcel of vines, the wine from which normally goes into Montesecondo's Chianti Classico. The vineyard is certified-biodynamic and at about 600 meters facing northeast on a steep slope of galestro soils in San Casciano in Val di Pesa (at the northern edge of the Chianti Classico zone). The bunches were harvested by hand and mainly destemmed, with the whole berries left uncrushed. Fermentation was spontaneous with natural yeasts and no sulfur or temperature control. Maceration was an extended one at around 6 weeks, with no use of extractive techniques (only a submerged cap). The wine was aged in oak for 1 year and bottled with a small amount of sulfur and without filtration. It aged in the bottle from 2019 until its 2024 release. This wine will not be made annually; the next vintage in the works is 2024.
