"Le Jardin d`Ulysse" Extra Brut

Chardonnay/Pinot Noir/Pinot Meunier. 2017 is the third vintage of this wine, which comes from a 1.55-hectare plot of old vines, planted to all three varieties in Collin's home village of Congy (where it appears on local vineyard maps as "Le Village" and is referred to by locals as "Le Clos") in the northern Coteaux du Morin. The exposure is a mix of northern and southern and the soils are soft clay and silex topsoils over limestone. As for all Collin Champagnes, the fruit is hand-harvested, the clusters destemmed and the grapes gently pressed; the juice is fermented spontaneously and slowly (up to six months) with natural yeasts in mainly-used Burgundy barrels. The wine is aged in foudres and tonneaux and bottled without fining or filtering and aged sur lattes for 6 years. The current lot was disgorged in February 2024 and finished with a dosage of 1-2 grams/liter.
