100% Mondeuse. Peillot has three hectares of this rustic Bugey variety. Many of the vines were planted in the early 2000's on the steep, rocky, clay-limestone scree of the village and cru of Montagnieu but some are up to 100 years old.  They are all gobelet-trained in the local en echalas style. The farming is organic and the harvest by hand. The fruit is destemmed, partly foot-trodden and fermented with indigenous yeasts in stainless steel with a maceration of around 10 days. Aging takes place in tank as well.
