100% Mondeuse. Peillot has three hectares of this rustic Bugey variety a relative of Syrah and Durif. Many of the vines were planted in the early 2000's on the steep, rocky, clay-limestone scree of the village and cru of Montagnieu but some are up to 100 years old.  They are all gobelet-trained. The farming is organic and the harvest by hand. The fruit is destemmed, fermented with indigenous yeasts in steel tank, with no extractive techniques and a week-long maceration. The wine is aged in tank.
