Muscadet Sèvre-et-Maine "Le Repos du Mouton"

100% Melon de Bourgogne. Gras Moutons is one of Pépière's classic bottlings, from a lieu-dit on a windy, south-facing slope in the Muscadet cru of Monnières-St. Fiacre. The soils are gravelly and sandy, with little clay, rich in decomposed amphibolites and gneiss. Recently, Pépière was able to add 4 hectares of it to their holdings and are bottling it separately as "Repos du Mouton" until these parcels are fully converted to biodynamic farming. Everything else is identical in terms of work in the vineyard and cellar. As for all Pepière wines, the hand-harvested bunches are direct-pressed and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees in large, underground, glass-lined cement tanks for 15 months followed by a year in bottle.
