35 year old vines, from a vineyard called “Le Désert du Petit Bannon” located in the commune of Vinon. The terroir is composed of clay-siliceous soil with lots of flint pebbles. Direct pressing with cold static settling for four days. The must is then moved into 400L barrels where it undergos fermentation with natural yeasts. Aged for 12 months in the same barrels then six months in stainless steel vats.
