100% Cabernet Franc. This is the classic wine from the estate, the first wine bottled by founder Paul Filliatreau and popularized in Parisian bistros back in the 1970s. Today the wine comes from a mix of parcels on clay-limestone soils. The vines average 35 years old and are certified-organic and in conversion to biodynamics (certification is on track for the 2021 vintage). The harvest is around half manual and half mechanical, varying by the vintage. The bunches are destemmed and fermented with native yeasts in stainless steel tanks. Maceration lasts about 10 days. The wine is aged in steel tank for 6 months.

"Domaine Filliatreau’s transition to all organic farming methods has taken the wines up a level in quality to my palate. Their regular bottling of Saumur Champigny is made from vines that are forty-plus years of age and the élevage for this wine is done entirely in tank, with an eye towards giving the wine early drinking appeal. The 2020 version is excellent, wafting from the glass in an expressive blend of dark berries, black cherries, a touch of tree bark, cigar ash, menthol and a lovely base of chalky soil tones. On the palate the wine is bright, full-bodied and nicely transparent in personality, with a lovely core of fruit, fine soil signature and grip, moderate tannins and excellent focus and balance on the long, vibrant and complex finish. I would be delighted to come across this in a restaurant in Tours, Paris or New York and drink it now, but it will be even better with a bit of bottle age to allow its moderate tannins to soften up even a bit more. 2023- 2050.
