Sauvignon St. Bris "Persévérance et Patience"

100% Sauvignon. 2022 is Petite Empreinte's first tiny vintage of St. Bris. The fruit comes from 2 micro-parcels of vines: one planted in 1990 on a western-exposed, Kimmeridgian limestone ridge in the village of Vincelottes, minutes south of Saint Bris and west of Irancy, and the second planted in 1959 on a north-facing yet very sunny slope of marnes blanche. The farming is organic and all work done by hand; yields are extremely low at 28 hl/ha.

The bunches were manually harvested and left as whole clusters. As for all of the miniscule production of the winery, fermentation was completely spontaneous in used barrique. 25% of the bunches were macerated without any punchdowns for 10 days and 75% were direct-pressed. These two youg wines were aged separately in barrique for 2 years without racking and then 6 months in steel. They were blended and bottled without filtration in February 2025. Zero suflur is added to the wine at any point.
