70% Pineau d'Aunis/24% Cabernet Franc/6% Orbois & Chenin Blanc. Valérie Forgue's are planted on clay-limestone soils in the heart of the Cher valley of the Touraine region in the Loire Valley. She farms them organically and harvests them by hand. The Gamay and Cab Franc are destemmed and co-fermented spontaneously in tank with indigenous yeasts with only an overnight maceration. To round it out this very light red, a small amount of the fresh white Entremêlés blend is added to the mix. The wine is aged in tank and bottled without fining or filtering and with a bare minimum of sulfur. It is a Vin de France and named for a fairy of local legend.
