50% Sauvignon/50% Colombard. Since 2021, Combel La Serre has worked with an organic farmer about two hours from Cahors toward Bordeaux to source fruit for their "workhorse white". The 2025 is a blend of Sauvignon and Colombard grown on limestone-rich clay soils. The bunches are manually harvested, direct-pressed and fermented spontaneously. The wine is aged for 6 months in cement and bottled unfiltered.
