100% Cabernet Franc. From certified-biodynamic vines on Filliatreau's Château Fouquet estate in Brézé. The bunches are destemmed, gently pressed and fermented with native yeasts in tank. The wine is bottled and goes through a single fermentation to dryness. It is disgorged and finishes with around 9 bars of pressure (and thus cannot be called a pet-nat, though it's made exactly like one, due to the 2.5-bar max for that category).
