100% Cabernet Franc. A pet-nat from certified-biodynamic vines on Filliatreau's Château Fouquet estate in Brézé. The bunches are destemmed, gently pressed and fermented with native yeasts and no maceration in tank. The wine is bottled and finishes its fermentation at complete dryness. It is disgorged and finishes with around 9 bars of pressure (and thus cannot legally be called a pet-nat, though it's made exactly like one, due to the 2.5-bar max for that category).
