Sèves

Marie Baltus and Foulques Bertholet founded Sèves in Bouzeron in 2023 with a single .63 hectare vineyard. They met in the Viti School in Beaune and trained at Bouchard Pere et Fils, Chanterêves, De Villaine, Claire Naudin, Cassiopée, and Sylvain Pataille. They hope to find more vineyards but for now, they are enjoying tending their small .63 hectare parcel called, “Les Cordères”.
Bouzeron is the only village in all of Burgundy dedicated solely to Aligoté. It gained its appellation status in 1997. The Aligoté here is golden in color and has thinner skin than most Aligoté planted throughout Burgundy, giving a better alcohol to acidity ratio when it’s ripening. Sèves Cordères vineyard was planted in 1981 and the site is on the southeast border of Bouzeron, near Rully. It’s the highest vineyard in the appellation, faces northwest and has a 10% slope with stony clay-silt topsoil. The top 70 centimeters of soil are very stoney, 40-50% stones and it sits on a white marl bedrock. The vines have low vigor and it’s a well-draining site – all beautiful hallmarks to make a complex wine.
They are in the process of converting the parcel to certified organic agriculture and expect to have the certification in 2026. They also are interested in having as little impact on the environment as possible and choose not to have an aluminum capsule and the bottles are returnable in France. The labels are from recycled paper that is free of dyes.
