80% Sauvignon/20% Menu Pineau. The Peltier Ravineau crew hand-harvest from a parcel named Marnière at the organic Domaine de Veilloux near Cheverny (Sauv: 30 yrs old. Menu: 10 yrs. old).  The bunches are direct-pressed in their 1960s Vaslin press and fermented spontaneously in fiberglass vat. The wine goes through malo and is aged for 7 months in fiberglass. Bottled unfiltered. Minimal sulfur.
