Pure Sauvignon. The Peltier Ravineau crew hand-harvest from 20-year-old vines at the organic Domaine de Veilloux near Cheverny. The bunches are direct-pressed in their 1960s Vaslin press and fermented spontaneously in fiberglass vat. The wine is aged a few months in fiberglass and bottled with a light filtration. Minimal sulfur.
