Chinon "Clos Guillot"


100% Cabernet Franc. Close to the town of Chinon, Clos Guillot is a hillside vineyard with south-southwest exposure, near the top of the hill, with clay soils rich in yellow tuffeau (the soft local limestone) and iron. The vines were planted between 1993 and 2000.  The farming is certified-organic. All vineyard work, including harvest, is by hand. The fruit is destemmed without crushing and moved by gravity into unlined cement vats. Fermentation is spontaneous with native yeasts and without sulfur or temperature control; maceration lasts around two weeks with a daily pumpover and no punchdowns. The wine is aged for a year in 2-5-year-old barrique and for a year in cement tank. It is bottled without filtration two years after the harvest. Sulfur usage is minimal.

"The 2021 le Clos Guillot from Domaine Baudry is an outstanding, classically styled young Chinon. Readers may recall that the family’s parcel in this great terroir were planted in 1993 and 2000, so they are just reaching their prime now. The bouquet is complex right out of the blocks, offering up scents of dark berries, cassis, tree bark, coffee bean, a beautifully complex base of soil tones, just a hint of oak from the wine’s one year’s worth of élevage in older barrels and a topnote of cigar smoke. On the palate the wine is pure, full-bodied, focused and complex, with a beautiful core of fruit, superb soil signature and a long, ripely tannic and impeccably balanced finish. I love the backend lift and grip here, but this superb Chinon is going to demand some cellaring time to let these tannins start to fade. 203203-2080. 94. 2021 Chinon “les Mollières”- Domaine Bernard Baudry The single vineyard Chinon “les Mollières” was first bottled on its own by Matthieu Baudry in the 2020 vintage. This is a higher altitude vineyard on the western end of the appellation, with the soils a mix of yellow limestone and clay. The wine is fermented with indigenous yeasts and raised in cement vats for fifteen months. The 2021 les Mollières tips the scales at a svelte 12.5 percent octane in this vintage and offers up a superb bouquet of cassis, dark berries, tree bark, cigar smoke, juniper berries and a lovely base of soil tones. On the palate the wine is pure, full-bodied and quite elegant in profile, with an excellent core of black fruit, impressive soil signature, finegrained tannins and a long, focused and impeccably balanced finish. This is an outstanding bottle of young Chinon and a superb new addition to the lineup chez Baudry. 2028-2065+. "
