Dolores González Torres is from Yebaniz-Batopilas, Chihuahua. The Sotol is 7 years aged in the wild. After a 5 day roast in earthen pit, he grinds by hand with an axe. The wild fermentation is in stone and clay vats. The Sotol is then double distilled on copper pots.
