SOTOL Dolores González Torres is from Yebaniz- Batopilas, Chihuahua The Sotol is 7 years aged in the wild.After a 5 Day roast in earthen pit he Grinds by hand with an axe. The wild fermentation is in stone and clay vats. The Sotol is then double distilled on copper pots. Only 340 liters produced.
