Cayuga White is a semi-aromatic hybrid variety that thrives in the Finger Lakes region due to its high resistance to frost and vine diseases. The Cayuga and Riesling undergo a short period of skin maceration (under 14 days), while the Gewürztraminer is fully fermented on its skins before being pressed and blended. The wine is fermented and matured on gross lees in stainless steel before bottling, resulting in a light and vibrant skin-contact wine.
