100% Chardonnay. Foradori has a new, multi-faceted project about 30 km from their Mezzolombardo estate on Monte Baldo in southern Trentino. Part of it is a 1.1-hectare plot of Chardonnay vines planted in 1985 (originally for making Ferrari Trento DOC sparkling) on clay-loam soils rich in Dolomitic limestone. "Miko-Flor" began as an experimetal bottling for Foradori, when the first barrels vinified developed a veil of flor, resulting in a saline, llightly oxidative white wine. The farming is biodynamic and the harvest manual. The fruit is destemmed and gently pressed. Fermentation is spontaneous and the maceration brief. The wine is aged in oak casks for 18 months and bottled without filtration in a 500ml format.
