100% Chenin Blanc. "Les Rosiers" is from Bellivière's younger Jasnières vines, across 24 parcels totaling 5 hectares. The vines are planted on flinty clay soils rich in tuffeau (soft limestone), are certified-biodynamic and harvested by hand. The bunches are direct-pressed into tank and the juice allowed to settle overnight; it is then moved by gravity into barrel for fermentation with native yeasts and minimal sulfur. The wine is aged in these1-3-year-old, 350-liter barrels, with a small proportion of new ones in any given year, for about a year. The 2021 finished at a sec tendre level of sweetness with 21 grams/liter of residual sugar (and 4.93 grams/liter of acidity). The name of the wine references the rose bushes the Nicolas family planted outside their cellar door decades ago.
