Half of the base for this piquette was sourced from Fossil & Fawn's 'Do Nothing' blend - a mix of wholecluster Pinot Gris, Gewürztraminer, and Muscat fermented carbonically. The grapes were pressed before dryness, and the pomace was rehydrated with water and chaptalized using vegan beet sugar. The remaining half of the blend is Pinot Gris juice added for lift and to increase complexity. The piquette was lightly filtered and force carbonated. The result is a crisp, easy-going, and lower-abv beverage (7%), with aromas and flavors of fresh melon, jasmine, hibiscus, and raspberry.
