100% Chenin Blanc. Château Fouquet is a lieu-dit in the village of Brézé, a few miles from the winery in Saumur-Champigny. Filliatreau acquired some abandoned Cab Franc vines here back in the 1990s and revitalized them and planted Chenin Blanc over the years since. The farming is certified-biodynamic and the soils are clay-limestone. The bunches are hand-harvested and destemmed. Fermentation is spontaneous--half in stainless steel and half in used barrique--and to full dryness. The young wines are aged in those same vessels for 3-4 months and then blended.
