75% Carricante/25% Catarratto. From 30-year old, sustainably farmed vines on sandy volcanic soils at 700-750 meters. The bunches are harvested by hand, gently pressed and fermented spontaneously in stainless steel with temperature control. The wine is aged for 10 months, with 60% of it in amphora and 40% in chestnut barrels. Production is approximately 3000 bottles. De Bartoli branched eastward to the north face of Mt. Etna in 2021.
