Valpolicella Classico Superiore "San Giorgio Alto"

60% Corvina/20% Corvinone/20% Rondinella. Monte dall'Ora has a 1.5-hectare plot in the hamlet of San Giorgio, about 8 kilometers from their estate vineyard. Like all of their others vines, they farm these biodynamically, but there are key site differences. San Giorgio is a steeper, southwest-facing vineyard at a much higher altitude of 500 meters (compared to 150 meters at home). It is further west, on the hill closest to Lake Garda, a tempering factor in this isolated, forest-encircled, windy, cool plot. At 25 to 40 years old, the vines are a bit younger than the estate vines. The limestone soils are similarly sandy and stony. The different varieties are co-planted. The bunches are hand-harvested, destemmed and fermented spontaneously and without sulfur in tank. Maceration lasts 8-10 days with periodic manual punch-downs. The wine is aged for up to 2 years in botti. It is bottled without filtration and aged for up to 2 more years before release.
