90% Menu Pineau/10% Petit Meslier. Brin de Chèvre ("goat's hay") comes from two neighboring parcels, one planted in 1937 and the other in 1950; currently, those original old vines make up about 70% of the wine, with the rest from massale-selection replantings from over the last decade or two. The vines are planted on sticky clay-flint soils that are worked with a horse and plow mainly to avoid damage to the fragile elder vines. The Puzelats farm them organically and harvest them manually, usually last among their whole estate due to the cold and windy nature of the site and to Menu Pineau's late-ripening nature. The bunches are pressed directly and the must fermented spontaneously with native yeasts and without sulfur in large oak tanks. The wine ages for about a year in used demi-muids and Burgundy barrels, without racking and with occasional stirring of the lees; it is bottled without fining or filtration and with a minute quantity of sulfur.
