Vouvray Brut


100% Chenin Blanc. Pinon makes two traditional-method sparkling wines, from bunches picked earlier than for the still wines and from the more clay and flint-forward parcels. The vines average 45 years old and have been certified-organic since 2007. Fruit for the brut is picked a little less ripe than that for the non-dosé. The hand-harvested bunches are rigorously sorted and gently and slowly pressed, with the juice flowing by gravity into underground tanks. Fermentation is spontaneous with indigenous yeasts and lasts 4 to 6 weeks. The wine is racked into old tonneaux and steel tanks for 2-3 months of aging on the fine lees. It is then lightly filtered and bottled for its second fermentation; the wine remains on the lees for 3 years before disgorgement and receives a 6-gram dosage. The 2019 finished with 8 grams RS and 4.5 grams of acidity.

"The 2019 Vouvray Pétillant Brut from Domaine Pinon is a lovely wine. The vins clairs are fermented with indigenous yeasts and raised in a combination of older tonneaux and tanks for three months prior to bottling up for secondary fermentation. The wine was aged for three years on its fine lees and finished with a dosage of six grams per liter after disgorgement. It offers up a fine nose of green apple, quince, chalky minerality, bread dough and a topnote of dried flowers. On the palate the wine is crisp, full-bodied and very well-balanced, with a fine core of fruit, lovely mineral undertow, frothy mousse and a long, complex and very well balanced finish. This is drinking very nicely out of the blocks, but will age long and gracefully as well. 2023-2040+. "
