80% Gamay/20% Pineau d'Aunis. From certified-biodynamic estate vines planted on flinty clay over tuffeau and yielding a maximum of 25 hl/ha. Harvest is manual. The grapes are destemmed, gently crushed and fermented spontaneously with native yeasts in vat. Maceration lasts several weeks with occasional punchdowns. The wine is aged in used barrels for a year and bottled without fining or filtering. For the record, Pollux is a long-time estate wine that has seen two changes in recent years. One, it used to be all Gamay and now includes varying amounts of Pineau d'Aunis. Two, it is now labeled and bottled as part of the Nicolas family's more newly created "Les Arches de Bellivière" line simply because, like the rest of those wines, it is a Vin de France (the appellation wines remain in the classic flute-shaped bottles with orange capsules and labels).
