80% Gamay/20% Côt. The Peltier Ravineau crew hand-harvest from 20- to-25-year-old vines at the organic Domaine de Cambalu near Cheverny. The Gamay and Côt are vinified separately, with spontaneous fermentation and gentle maceration in fiberglass vat. The wine is blended and aged in a mix of fiberglass tank, tronconic oak vat and old barrique for 4 months. Bottled unfiltered. Minimal sulfur.
