80% Pinot Noir/20% Gamay. The Peltier Ravineau crew hand-harvest from a parcel of low-yielding, 30- to-40-year-old vines called Les Patureaux at the organic Domaine de Cambalu near Cheverny. The Pinot & Gamay are vinified separately, with spontaneous fermentation and gentle maceration in a tronconic oak vat. The wine is blended and aged 8 months in the same vat. Bottled unfiltered. Minimal sulfur.
