The hand harvested grapes are partially destemmed, crushed and fermented with whole clusters added back in open top fermenters for two to three weeks at cellar temperature.  The juice then remains on the gross lees for 10 to 11 months in old French oak barrels.

The grapes were crushed and fermented with stems. Maceration time was from three to four weeks in one- ton fermenters. The wine was aged in older French oak barrels, on the lees, for close to two years. The wine was then blended and bottled with minimal sulfites.
