Blanco de Tinto is made with 100% Cabernet Sauvignon from Renaissance Vineyard in North Yuba. Dani harvested the grapes into small boxes to avoid grapes breaking and extracting color from the skins. The grapes are pressed very gently over the course of hours, once again in order to extract very little color from the skins and produce a white wine. The wine spends 16 months sur-lie in used oak before further bottle aging. A delicious and unique perspective from low yielding, old vine Cabernet.
