Cabernet Sauvignon (80%), Sauvignon Blanc (20%) from the Renaissance Vineyard in North Yuba, CA. The Sauvignon Blanc was harvested first and foot-crushed, with the Cabernet Sauvignon being direct-pressed onto the skins and stems of the Sauvignon Blanc. The must soaks for a few days until fermentation begins and the juice is pressed off of the white skins for primary fermentation. The wine was matured for 12 months in large French puncheons and bottled with a minimal addition of so2 (30ppm), unfined and unfiltered.
